Cheesy chicken casserole

Last day of the long weekend! This is what we had for lunch:


4 cloves garlic, crushed
A bit of red onion (half of a medium sized one)
1 cup shreded chicken (I used left over roast chicken)
3 tomatoes, sliced into strips
1 carrot, diced
Soft cheese (mozarella, quick melting cheddar, cream cheese… Your choice)
Optional: 1 tablespoon butter

1. SautΓ© garlic and onion till onions caramelize
2. Add carrots, tomato and chicken.
3. Add cheese on top. Cover for 5 to 10 minutes with heat set on high (about 250F).
